Prof. Ibok Oduro

Ibok Oduro is a Professor of Postharvest Technology at the Department of Food Science and Technology, Kwame Nkrumah University of Science and Technology (KNUST), Kumasi, Ghana. She is the immediate past Provost of the College of Science and the first woman to occupy that position in the University. She is passionate about education and is committed to promoting STEM education – particularly among young women. Her research is dedicated to promoting indigenous and underutilised food crops in West Africa through value addition. She has authored numerous publications and nurtured many young researchers who now occupy influential positions in food and agriculture. Her research continues to evolve, and her current interests include transforming food waste into useful products. Her achievements have earned her both national and international recognition. She received the Excellence and Innovation in Sweetpotato Award, in recognition of developing material that promoted fortified sweetpotato yoghurt to help curb vitamin A deficiency. She enjoys mentoring young women and promoting transformational leadership. She is the President of the Women in STEM (WiSTEM Gh) initiative, which she co-founded. She is also Chairperson of the International Leadership Foundation, Ghana, where she continues to impact lives through her public speeches and workshops.
