Prof. Emmambux is a full professor in the Department of Consumer and Food Sciences, Faculty of Natural and Agricultural Sciences, at University of Pretoria. He is currently the principal investigator at the DSI/NRF Centre of Excellence in Food Security and EU-funded InnoFoodAfrica.
Prof. Emmambux’s research relates broadly to the chemistry and technology of African food biopolymers for nutrition and functional use. The main focus is on biopolymer modification for clean label used as nano-materials, non-gelling high viscosity materials for stabiliser and fat replacers, low glycaemic index foods, encapsulation of nutraceuticals, and biocomposites with other biopolymers. He also works on extrusion, infrared, and microwave as processing technologies.
He is currently working with six MSc students, nine PhD candidates. and four postdoctoral fellows. Over 16 PhD and 30 MSc students have graduated under his supervision. He has also mentored seven postdoctoral fellows.
